Don't let the name scare you - it's easier than you think to make Shakshuka. Ideal for a quick lunch!

What You'll Need:

for 2 persons

  • 2-3 fresh tomatoes

  • 2 bell peppers (I use red ones or yellow)

  • 1 white onion

  • Tomato puree

  • 1 can of canned tomatoes, crushed

  • 4 eggs

  • 1 teaspoon paprika powder

  • 1 teaspoon cumin powder

  • 1/2 teaspoon turmeric powder

  • A little bit of cayenne pepper (depending on how spicy you like it)

  • Salt and pepper

  • Olive oil

  • Fresh coriander

  • Optional: sourdough bread to serve it with

How to:

  1. Slice the pepper and onion, and chop the tomatoes into cubes.

  2. Add it to a pan over medium heat with olive oil and let it simmer until soft.

  3. Add a can of tomatoes and your seasoning and stir.

  4. Simmer for 5-10 minutes until the sauce thickens.

  5. Crack 4 eggs directly on top of it, cover with a lid and cook on low heat until the eggs are done to your liking (I like to cook mine for about 7 minutes for runny yolks)

  6. Top it with fresh coriander - parsley is also delicious.

Serve it with a slice of sourdough bread and some butter or cream cheese - enjoy!
