No-bake Avocado Cake

One of the best raw cakes out there in my opinion!

The recipe is from one of my favorite Icelandic food bloggers "Albert eldar". I've made it many times and it is always a hit! Here's a translation of the recipe.


What You'll Need:


Bottom:

  • 3.5 dl coconut flour

  • 3.5 dl almonds

  • 1/2 teaspoon salt

  • 350gr dates (pre-soak them in water for 10 minutes)


How to:

  1. Grind almonds in a food processor.

  2. Add coconut flour, salt and the dates (be sure you drain them first).

  3. Place a round cake form on a serving dish an and add the batter. Press it evenly to the bottom until smooth and nice.

  4. Let it cool in the fridge while you start making the filling.


Filling/top:

  • 2 big ripe avocados

  • 1/2-1 dl honey

  • 1/2-1 dl lime juice

  • 1 dl coconut oil liquid


How to:

  1. Add everything to a blender and mix until silky smooth.

  2. Taste it and add more lime/honey if needed. It says in the recipe "not more than 1dl" so I would just start with a bit more than 0.5 dl and add more (up to 1 dl) if needed.

  3. Pour it over the bottom.

  4. Cool it down in the fridge for minimum an hour or overnight.

  5. Decorate with berries or something you like.


ENJOY! I think it's the perfect cake to bring to a brunch plus it's very easy to make in advance :)
