Fluffy and Moist Banana Bread

Simple and delicious - perfect for a cozy weekend morning or an afternoon coffee break.

This recipe is a mix of ideas and ingredients I've gathered from various recipes over the years. After lots of tweaks and experiments, this version has become my go-to for a few years now. It's simple, delicious and always a hit - perfect for a cozy weekend morning or an afternoon coffee break.


What you'll need:

  • 2 ripe bananas

  • 2 eggs

  • 1 dl sugar (I usually mix brown sugar with white sugar ca 50/50)

  • 2 dl flour

  • 1 dl oats

  • 1/2 dl coconut flour

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon

  • 2 teaspoons vanilla extract

  • 1/2 dl milk

  • 50gr butter

  • Sea Salt (just a tiny bit)


Now let's start:


  1. Preheat the oven to 175°C with the fan on.

  2. Melt the butter and set aside.

  3. Beat eggs and sugar together with an electric mixer until light and fluffy.

  4. Add dry ingredients and combine slowly with a spoon.

  5. Add solids plus the mashed bananas and mix slowly until the dough is smooth (just be careful to not over mix it).

  6. Pour the dough into a baking form with parchment paper.

  7. Sprinkle some oats on top.

  8. Bake for about 40-50 mins or until a fork comes out clean.

Enjoy it with butter and a cheese slice - or (!) with espresso mascarpone cream. I will do a separate post with a recipe for that one so stay tuned!
