Simple and delicious - perfect for a cozy weekend morning or an afternoon coffee break.

This recipe is a mix of ideas and ingredients I've gathered from various recipes over the years. After lots of tweaks and experiments, this version has become my go-to for a few years now. It's simple, delicious and always a hit - perfect for a cozy weekend morning or an afternoon coffee break.
What you'll need:
2 ripe bananas
2 eggs
1 dl sugar (I usually mix brown sugar with white sugar ca 50/50)
2 dl flour
1 dl oats
1/2 dl coconut flour
1 teaspoon baking powder
1 teaspoon cinnamon
2 teaspoons vanilla extract
1/2 dl milk
50gr butter
Sea Salt (just a tiny bit)
Now let's start:
Preheat the oven to 175°C with the fan on.
Melt the butter and set aside.
Beat eggs and sugar together with an electric mixer until light and fluffy.
Add dry ingredients and combine slowly with a spoon.
Add solids plus the mashed bananas and mix slowly until the dough is smooth (just be careful to not over mix it).
Pour the dough into a baking form with parchment paper.
Sprinkle some oats on top.
Bake for about 40-50 mins or until a fork comes out clean.
Enjoy it with butter and a cheese slice - or (!) with espresso mascarpone cream. I will do a separate post with a recipe for that one so stay tuned!
