Fresh and Tasty Bulgur Salad

This flavourful and nutritious salad is easy to make and great for meal-prep. Perfect for a quick lunch or a light dinner.

What You'll Need:
for two people
2 dl bulgur
1 head of romaine lettuce
8-10 cherry tomatoes
1/2 cucumber
1/2 mango
Feta cheese by taste
A handful of cashew nuts
A few raisins
Salt and pepper
Olive oil
How to:
Rinse the bulgur.
Boil 2 dl of bulgur with 4 dl of water (use the 1:2 bulgur-to-water ratio). Here's how I usually do it: Add bulgur and water to a pot with a pinch of salt. Bring to boil, lower the heat and let it simmer for about 10 minutes or until water is absorbed. Remove from heat and let it sit covered for about 5 minutes. Use a fork to fluff it up.
Wash and chop all the veggies.
Combine everything in a big bowl.
Drizzle a good amount of olive oil and some salt and pepper.
Blend well together and enjoy!
I love it best when it's freshly made and the bulgur is still slightly warm but this salad is also great to keep in the fridge for later.
